Saffron is graded on three compounds: crocin (colour), picrocrocin (flavour) and safranal (aroma). Afghan saffron regularly tests at crocin levels above 250 on the ISO scale, placing it in the highest category. In practice that means a few threads colour an entire pot of rice a deep, even gold, so a small tin lasts far longer than cheaper grades.
A climate built for saffron
The saffron crocus wants hot, dry summers and cold winters, with poor, well drained soil. Herat offers exactly that. The flowers are stronger, the stigmas longer and thicker, and the pigment more concentrated than saffron grown in more forgiving climates.
Hand harvested, hand sorted
Every crocus is picked by hand at dawn, before the heat opens the petals. The three red stigmas are separated by hand the same day. It takes roughly 150 flowers to make a single gram. No machine can do this without bruising the thread, which is why real premium saffron will always carry the cost of human hands.
How to spot the difference
Genuine Afghan saffron threads are trumpet shaped at one end, deep red with a slightly orange tip, and give off a honey and hay aroma. Drop a thread in warm water and the colour releases slowly, over minutes, not instantly. An instant red bleed is the sign of dye.
